Since finding that i might have Celiac disease, but knowing for sure I have a gluten intolerence, it changes how you look at food completely. Celiac is a disease where you have a very high gluten intolerence, and what happands when you eat it is these little hairs in your intensetines that gather nutrients get flatend. So over time, if you were to eat it, you would die because your body would take in no nutrition.

Other symptoms include being severely bloated, horrible pain in your stomach, getting depressed, extreme fatigue, really painful uhh bathroom sessions.. and alot more awful things i was feeling for years.
When I was vegan I think i devolped a gluten problem cause its pretty much all i ate.
Gluten is in almost everything but expessally grains, fake meat, bread, which was what I ate alot when I was vegan.

So anyways, eating is not very fun anymore. I mean, i guess it is just getting used to it. I am someone who loves sauces and pasta and bread..
heres what I can't have :(

sour cream commercial chocolate milk and drinks, non-dairy creamers, all other cheese products, yogurt ( some kinds atleast)
meat patties; canned meat; sausages; cold cuts; bologna; hot dogs; stew; hamburger; chili; commercial omelets, soufflés, fondue; soy protein meat substitutes ( no more chikkn' nugguts :[ )

croquettes, breaded fish, chicken loaves made with bread or bread crumbs, breaded or floured meats, meatloaf, meatballs, pizza, ravioli, any meat or meat substitute, rye, barley, oats, gluten stabilizers

breads, buns, rolls, biscuits, muffins, crackers, and cereals containing wheat, wheat germ, oats, barley, rye, bran, graham flour, malt; kasha; bulgur; Melba toast; matzo; bread crumbs; pastry; pizza dough; regular noodles, spaghetti, macaroni, and other pasta; rusks; dumplings; zwieback; pretzels; prepared mixes for waffles and pancakes; bread stuffing or filling

gravy and cream sauces thickened with flour, packaged rice mixes, cornbread, ready-to-eat cereals containing malt flavoring, salad dressings, non-dairy creamers, mayonnaise, pie fillings, thickened or prepared fruit, fruit fillings

creamed or breaded vegetables; those prepared with wheat, rye, oats, barley, or gluten stabilizers

vegetables with sauces, commercially prepared vegetables and salads, canned baked beans, pickles, marinated vegetables, commercially seasoned vegetables

custards, puddings, ice cream, ices, sherbet, pie fillings, candies, chocolate, chewing gum, cocoa, potato chips, cakes, cookies, doughnuts, pastries, dumplings, ice cream cones, pies, prepared cake and cookie mixes, pretzels, bread pudding

cocoa mixes, root beer, chocolate drinks, nutritional supplements, beverage mixes

Postum™, Ovaltine™, malt-containing drinks, cocomalt, beer, ale, gin, whiskey, rye

soups thickened with wheat flour or gluten-containing grains; soup containing barley, pasta, or noodles
wheat starch; all flours containing wheat, oats, rye, malt, barley, or graham flour; all-purpose flour; white flour; wheat flour; bran; cracker meal; durham flour; wheat germ
synthetic pepper, brewer's yeast (unless prepared with a sugar molasses base), yeast extract (contains barley

So basically, i can eat...
Rice,
Corn,
All veggies,
all fruit,
meat but i only eat fish so thats kinda hard
and well thats about it.
So i can have thai food at least!

its weird though i've lost weight but i feel alot beter. Most the time. I hope I don't have Celiac, because than I really have to be careful. If you eat gluten when your not supposed to, you eventually get stomach cancer/tumors in your intesetines.
well yes that is my gluten free rant.

Jess

it's been a while...
but i saw your entry, and i have a friend at school who has a mild intolerance to wheat products...she has so much wheat free stuff!! she's found crackers, pasta, granola/power bars...(even beer and vodka! haha) and a lot of places have wheat free menus, so if you want me to get the names of some products or even put you in touch with her, let me know.

good luck with this...i know its horrible :(

Folk-rock friends turned me on to southern brown rice in the 90s on which they added carrots, cabbage and onions. it was just about the greatest meal i'd ever consumed. it seemed so simple

it's all we need, i think

yet it seems impossible to find an organic version of this combination at a restaraunt

Are you able to eat nori or avacado rolls at Om?
i could eat those every day

yum

so happy you're better

Aw, I'm sorry Jess, that sucks. But, at least if this is what is wrong, you'll finally know why you've been feeling so crappy, and you'll be able to fix it.

So that's why you said I can't bake you cookies. You didn't tell me. You know how I told you about my grandma and her gluten problem? She has Celiac disease. It's very hard but you learn to live with it and enjoy life better since you're not in as much pain. When you lose a little, you still gain some and more.
